The 2020 Ube season has been very poor this year. Supply is very difficult to source.
Dioscorea alata. Purple Yam. Or as the Filipinos know it, ube.
These fresh purple yams from the Northern Territory or Queensland have a mildly sweet, earthy and nutty taste - similar to taro or sweet potatoes. The purple yams, turn any dish purple due to its anthocyanins.
Fresh Australian Purple Yam/Ube season is usually from April to November.
NOTE: These are not the same as the purple sweet potato, or the Hawaiian/Okinawan sweet potato.
